  • 4 cups rye bread cubes
  • 1 lb thinly sliced corned beef, cut into strips
  • 1 1/2 cups sauerkraut, drained
  • 1 cup Russian-style salad dressing
  • 2 cups shredded Swiss cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly spray a 9×13-inch baking dish with cooking spray. Prepare a sheet of aluminum foil by spraying one side with cooking spray.
  2. Spread the rye bread cubes evenly on the bottom of the baking dish.
  3. Layer the sauerkraut over the bread cubes, followed by the strips of corned beef.
  4. Drizzle the Russian dressing evenly over the layers.
  5. Cover the casserole with the prepared aluminum foil, sprayed-side down, to prevent sticking.
  6. Bake in the preheated oven for 20 minutes.
  7. Remove the foil and sprinkle the Swiss cheese over the top of the casserole.
  8. Return to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
