  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 oz chorizo, sliced
  • 1 dried chili, crumbled
  • 2 medium tomatoes, grated
  • 1 tbsp tomato paste
  • 1/2 cup white wine
  • 2 garlic cloves, minced
  • 1/4 tsp saffron threads
  • 1 tsp smoked paprika
  • 1 1/2 cups short-grain rice
  • 4 cups chicken stock
  • 8 large shrimp, peeled and deveined
  • 8 mussels, scrubbed and debearded
  • 8 clams, scrubbed

Instructions

  1. Heat a medium-sized paella pan over medium-high heat, add olive oil, onion, bell pepper, chorizo, and dried chili. Sauté for about 3 minutes until the vegetables soften.
  2. Grate tomatoes directly into the pan, stirring until the liquid reduces by half.
  3. Lower the heat and add tomato paste, white wine, garlic, saffron, and paprika, stirring until well combined.
  4. Stir in the rice and chicken stock, ensuring everything is evenly mixed. Simmer on low heat, without stirring, for 15 minutes, checking occasionally to prevent sticking.
  5. After 15 minutes, add shrimp, mussels, and clams. Cover with a lid or foil and cook on low for an additional 5 minutes.
  6. Turn off the heat and allow the pan to sit for 5 minutes before removing the lid. Fluff the paella with a fork before serving.
